Dragon Tongue is a unique, multi-purpose Dutch heirloom. This horticultural type bush bean is suited for harvest as a fresh snap bean or as a shelled bean at full maturity. As a snap bean, harvest when the flat, 6 to 8″ beans turn from lime green to a buff yellow with bright purple stripes. At this stage, the stringless pods are extremely crisp, juicy and sweet. If dried beans are desired, let pods fully mature. The mature seeds are light brown with dark mottling.
